Easy to prepare Homemade Potato Herb Whole Wheat Rolls are a delicious, wholesome, and satisfying addition to any meal!
Life’s most precious moments often unfold around the kitchen table, shared with loved ones over a comforting meal. I’ve been incredibly fortunate to have an extraordinary aunt, Judie, who embodies this spirit of love and nurturing. She’s always been more than an aunt; she’s been a second mother, a confidante, and a source of endless laughter. Since my mom passed away five years ago, her presence has become even more invaluable in my life, anchoring our family with her unwavering support and boundless energy. Just last week, she showcased her incredible dedication and love by coming over to my house with one specific mission: to clean my blinds. Yes, you read that right – my blinds! While I tend to focus on the “big picture” (and let’s be honest, cleaning blinds isn’t usually top of my list), Aunt Judie is wonderfully detail-oriented, and I adore that about her.
With impressive gusto, she tackled the windows in my newly organized Mom Cave. Each individual slat was meticulously cleaned, screens were removed and washed, and the windows themselves sparkled inside and out. It was truly a transformation! Even better than the gleaming windows was the gift of spending an entire day together, chatting, catching up, and simply enjoying each other’s company. As the day wound down, Aunt Judie stayed for dinner, and my dad joined us after work. To mark the occasion, I planned to make his favorite, Chicken Cordon Bleu, and decided some fresh, homemade rolls would be the perfect accompaniment.
The Unexpected Twist: Creating Our Favorite Whole Wheat Rolls
With dinner preparations in full swing, I confidently reached for my go-to roll recipe ingredients. To my utter dismay, I discovered I was completely out of all-purpose flour! It was an unbelievable moment – I usually keep a stash of two or three large bags. After a brief moment of panic, a solution presented itself: I had plenty of whole wheat flour on hand. Instead of abandoning the idea of fresh rolls, I saw an opportunity to experiment. This unexpected turn led to the creation of what quickly became a new family favorite: these incredible Potato Herb Whole Wheat Rolls!
The aroma that filled my kitchen as these rolls baked was nothing short of heavenly. It was a warm, earthy, slightly sweet scent mingling with the subtle hint of herbs, promising a delightful culinary experience. Aunt Judie took a break from her impeccable blind-cleaning duties, and the boys (my ever-eager taste-testers) couldn’t resist. They all sampled a fresh, warm roll right out of the oven, and the verdict was unanimous: two enthusiastic thumbs up from everyone! I actually had to gently intervene to ensure we had enough left for dinner, a clear sign of their irresistible appeal.
Why These Whole Wheat Rolls Stand Out
There’s an undeniable satisfaction that comes with homemade whole wheat rolls. They offer so much more than their white flour counterparts – a richer texture, a heartier substance, and a depth of flavor that’s truly captivating. The addition of mashed potatoes lends an incredible tenderness and moisture, making each bite wonderfully soft, while the blend of herbs adds an aromatic complexity that elevates these rolls from simple bread to a memorable side dish. My son, Reece, demonstrated their appeal perfectly at dinner, devouring three rolls with gusto. He’d split each roll in half, generously smear on a tablespoon of butter, and revel in pure bliss. Bryce, of course, quickly followed suit. Watching them, I couldn’t help but marvel at their youthful metabolism, completely oblivious to the calories. Ah, to be four again!
These Easy Homemade Potato Herb Whole Wheat Rolls are not just delicious; they are incredibly easy to prepare, making them a fantastic option for both seasoned bakers and beginners alike. The recipe is straightforward, designed to deliver impressive results without unnecessary fuss. The use of whole wheat flour provides a wholesome, nutty flavor profile and a satisfying chewiness, while the potatoes ensure they remain moist and tender for longer. Infused with Italian seasoning, these rolls bring a delightful herby fragrance and taste that complements a wide array of main courses, from hearty soups to savory casseroles. They are the perfect blend of rustic charm and comforting flavor, destined to become a staple at your family table.

Ingredients
- 2 1/4 tsp active dry yeast (1 packet)
- 2/3 cup warm water, divided
- 1/3 cup shortening
- 1/3 cup sugar
- 1/2 cup mashed potatoes (no milk or butter added)
- 1 egg
- 1 tsp Italian seasoning
- 1 1/4 tsp salt
- 3 to 3 1/2 cups whole wheat flour
Instructions
- Dissolve yeast in 1/3 cup warm water in a small bowl. Let stand for 5-10 minutes until foamy.
- In a large mixing bowl, cream together sugar and shortening until the mixture is light and fluffy.
- Add the prepared mashed potatoes, egg, the activated yeast mixture, Italian seasoning, salt, the remaining 1/3 cup warm water, and 1 1/2 cups of the whole wheat flour to the creamed mixture. Beat until smooth and well combined.
- Gradually add the remaining whole wheat flour, about 1/2 cup at a time, mixing until a soft, pliable dough forms. The dough should be slightly sticky but manageable.
- Lightly grease a clean bowl. Shape the dough into a ball (no need for extensive kneading at this stage) and place it in the greased bowl.
- Turn the dough over once in the bowl to ensure the top is also lightly greased. This prevents a dry crust from forming during rising.
- Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place until it has almost doubled in size, which typically takes about one hour.
- While the dough is rising, prepare your baking dish. Lightly grease a 9×13 inch baking dish.
- Once the dough has risen, gently punch it down. Divide the dough in half, then shape each half into 7-8 individual balls, aiming for a total of 15 evenly sized rolls.
- Arrange the shaped rolls in the greased baking dish, leaving a small space between each roll. Cover the dish again and let the rolls rise for an additional 30-45 minutes, or until they look visibly puffy.
- Preheat your oven to 375°F (190°C).
- Bake the rolls in the preheated oven for 20 minutes, or until they turn a beautiful golden brown on top and sound hollow when tapped lightly.
- Carefully remove the rolls from the baking dish and transfer them to a wire rack to cool slightly. Serve warm with butter, or store for later enjoyment.
- This recipe yields 15 wonderfully soft and flavorful rolls, perfect for sharing (or not!).
