The Unmatched Allure of Reese’s Peanut Butter Cups
It feels like an eternity since we last shared a dedicated Reese’s recipe, which is truly far too long for any serious dessert enthusiast. But rest assured, our love affair with Reese’s is as strong as ever. Our pantry is perpetually brimming with every delightful iteration: Reese’s Pieces, Minis, Miniatures, classic Peanut Butter Cups, and, of course, those essential Reese’s Peanut Butter Baking Chips. Each form promises a burst of that iconic chocolate and peanut butter harmony, making them indispensable for both snacking and baking endeavors.
The combination of rich chocolate and creamy, slightly salty peanut butter is a culinary match made in heaven, a flavor profile that resonates with countless sweet tooths around the globe. Reese’s products have a unique ability to transform any ordinary dessert into something extraordinary, adding a layer of indulgence and nostalgia that is hard to resist. This deep affection for Reese’s is precisely what inspired us to create a cookie that truly celebrates this beloved candy in the most spectacular way possible.
Baking Inspiration: A Sacramento Spring Delight
Just last week, my husband, Chris, was tasked with bringing a treat to another one of his work BBQs. Yes, you heard that right – these folks certainly know how to celebrate! The timing couldn’t have been more perfect, as we’re currently experiencing the glorious 80-degree weather here in Sacramento. Spring in our city is a fleeting, beautiful period, offering warm, sun-drenched days and refreshingly cool nights. We make sure to savor every moment, knowing that soon enough, temperatures will soar into the triple digits, making any outdoor activity feel like a monumental task.
So, when Chris requested his absolute favorite chocolate chip cookies, made using our tried-and-true giant chewy chocolate chip cookie recipe, I was more than happy to oblige. However, a tiny, yet incredibly significant, idea sparked in my mind: why not take these already perfect cookies and stuff them? When it comes to stuffing a cookie, I firmly believe in the “go big or go home” philosophy. And what better to stuff them with than the ultimate surprise?
The Ultimate Indulgence: Reese’s Stuffed Perfection
These aren’t just any giant, chewy chocolate chip cookies; they are generously stuffed with snack-size Reese’s Peanut Butter Cups. Let me tell you, dear readers, these cookies have officially claimed the title of my new all-time favorite. The moment they emerge from the oven, they are nothing short of pure heaven. Each cookie boasts a perfectly crisp edge that gives way to an incredibly ooey-gooey, soft center.
The initial bite is a symphony of classic chocolate chip cookie flavor and texture – sweet, rich, and wonderfully chewy. But then, just when you think it can’t get any better, you hit the glorious core: a molten, warm Reese’s Peanut Butter Cup, its chocolate and peanut butter flavors beautifully melded and gloriously soft. It’s an unexpected explosion of flavor and texture that truly sets these cookies apart. Can you imagine a more delightful surprise nestled within a humble chocolate chip cookie?

Ingredients
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp corn starch
- 1 tbsp vanilla extract
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 large egg plus 1 egg yolk, at room temperature
- 1 1/2 cups semi-sweet chocolate chips or milk chocolate chips, or a combination
- 12 snack size Reese’s Peanut Butter Cups, unwrapped
Instructions
- In a medium bowl, combine the dry ingredients: flour, baking soda, salt, and corn starch. Whisk them together until well combined.
- In a large mixing bowl, cream together the melted unsalted butter with the brown sugar and white sugar until light and fluffy.
- Beat in the vanilla extract, then add the large egg and the extra egg yolk. Continue beating for 2-3 minutes until the mixture becomes pale, light, and creamy. This step is crucial for chewy cookies.
- Gradually add the sifted dry ingredients to the wet mixture, mixing on low speed just until combined. Be careful not to overmix the dough.
- Gently fold in the chocolate chips until evenly distributed throughout the dough.
- Take approximately 1/4 cup of cookie dough and flatten it into a disc in your palm. Place one unwrapped Reese’s Peanut Butter Cup in the center of the dough. Carefully wrap the dough around the peanut butter cup, making sure to completely enclose it and seal the edges so none of the Reese’s is exposed.
- Continue this process until all the cookie dough and Reese’s Peanut Butter Cups have been used. You should have 12 large stuffed cookies.
- Arrange the prepared cookie dough balls on a baking sheet lined with parchment paper. Refrigerate the cookies for 20-30 minutes. Chilling the dough helps prevent the cookies from spreading too much and keeps the Reese’s intact.
- While the dough is chilling, preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius).
- Place the chilled cookies on the parchment-lined baking sheet, ensuring they are spaced about 3 inches apart to allow for spreading. Bake for 15 to 17 minutes, or until the edges are golden brown and the centers still look slightly soft.
- Once baked, remove the cookies from the oven. Let them cool on the baking sheet for at least 5-10 minutes before transferring them to a wire rack to finish cooling completely. This allows them to set properly and keeps them wonderfully chewy.
- Serve warm for the ultimate ooey-gooey Reese’s center, or enjoy at room temperature. Enjoy your extraordinary Reese’s Stuffed Giant Chewy Chocolate Chip Cookies!

Expert Tips for Baking the Best Stuffed Cookies
Achieving bakery-quality stuffed cookies at home is entirely possible with a few simple techniques. First, always use room temperature eggs and an extra egg yolk, as specified in the recipe. The egg yolk adds richness and contributes significantly to that desirable chewy texture. When creaming butter and sugars, ensure it’s done thoroughly until the mixture is light and fluffy; this incorporates air, leading to a lighter, more tender crumb.
Another critical step is chilling the cookie dough. This isn’t merely a suggestion; it’s vital for preventing the cookies from spreading too much in the oven, ensuring they maintain their substantial shape and the Reese’s Peanut Butter Cup stays perfectly encapsulated. The cold dough also allows the flavors to meld beautifully. Don’t overmix the flour once added; overmixing develops gluten, which can lead to tough cookies. Mix just until combined.
Finally, keep a close eye on your baking time. The cookies should have golden edges but still appear slightly soft in the center when you pull them from the oven. They will continue to bake slightly as they cool on the hot baking sheet. Letting them cool on the sheet for 5-10 minutes before transferring to a wire rack is crucial for them to set without falling apart, ensuring that molten Reese’s center holds its shape.
