Easy Mexican Chicken and Rice Casserole

Ingredients

  • 1 1/2 cups rice uncooked
  • 3 cups chicken stock or broth
  • 16 oz refried beans
  • 3 cups cubed or shredded chicken I used a Rotisserie chicken
  • 10 oz enchilada sauce
  • 10.75 oz cream of chicken soup
  • 4 oz chopped green chiles
  • 1 can black beans , rinsed and drained thoroughly
  • 8 oz cream cheese , cut into small cubes
  • 3 green onions , thinly sliced
  • 12 oz shredded cheese , divided (I used a Mexican blend)

Instructions

  • Prepare rice according to package instructions, replacing the water with the chicken stock for added flavor.
  • Preheat oven to 350°F (175°C).
  • Lightly spray a 9 x 13 inch baking dish with cooking spray. Evenly spread the refried beans across the bottom of the dish to form the first flavorful layer.
  • In a large mixing bowl, combine the cooked rice, shredded or cubed chicken, rich enchilada sauce, creamy cream of chicken soup, chopped green chiles, thoroughly rinsed and drained black beans, small cubes of cream cheese, and thinly sliced green onions. Stir gently until all ingredients are well combined. Carefully spread this vibrant mixture over the layer of refried beans in the baking dish.
  • Cover the baking dish tightly with aluminum foil and bake for 35 minutes. After 35 minutes, remove the foil and generously sprinkle the remaining shredded cheese over the top of the casserole. Return the casserole to the oven, uncovered, and continue baking for another 7-10 minutes, or until the cheese is beautifully melted, bubbly, and lightly golden.
  • Allow the casserole to rest for a few minutes before serving immediately. Garnish with extra green onions, a dollop of sour cream, or fresh cilantro if desired.
