  • 8.25 ounce Dole crushed pineapple juice and all (do not drain)
  • 3 tbsp butter
  • 1 tsp pineapple extract or clear vanilla extract
  • 1 cup white chocolate chips
  • 7 oz marshmallow creme

Instructions

  • Prepare your baking pan by lining a 9 x 5 inch loaf pan with non-stick foil. Lightly butter the foil to ensure easy removal.
  • In a sturdy, heavy-bottomed 3-quart saucepan, combine the granulated sugar, half and half, light corn syrup, the full can of crushed pineapple (including its juice), and butter.
  • Place the saucepan over medium-low heat. Stir continuously until all the sugar crystals have completely dissolved and the mixture comes to a gentle boil.
  • Continue cooking the mixture, stirring frequently to prevent scorching, until it reaches precisely 236°F (113°C) on your candy thermometer. This is within the “soft ball stage” range (234°F – 240°F). I highly recommend using this digital candy thermometer for accuracy.
  • Carefully remove the saucepan from the heat. Immediately stir in the pineapple extract (or clear vanilla extract, if substituting).
  • Stir the mixture vigorously for about 3 minutes. During this time, you’ll observe the candy beginning to thicken ever so slightly, indicating it’s ready for the next step.
  • Add the white chocolate chips to the hot fudge mixture. Continue stirring until the chips are completely melted and smoothly incorporated, creating a luscious, uniform consistency.
  • Finally, stir in the marshmallow creme until it is fully blended, adding to the fudge’s incredible creaminess and delightful texture.
