Instructions

  3. Cook, stirring occasionally, until the onions are deeply golden brown and beautifully caramelized (approximately 20–25 minutes). Continue cooking until all liquid has evaporated. Set aside.
  4. Heat a clean skillet over medium heat.
  5. If using, spread mayonnaise on one side of each bread slice for extra crispiness.
  6. Place three bread slices in the skillet, mayonnaise side down (if using).
  7. Immediately top each slice of bread with slices of Provolone cheese, followed by a generous layer of the caramelized onions, and finish with slices of Gruyère cheese.
  8. Top each with another slice of bread, ensuring the mayonnaise side (if used) is facing outwards.
  9. Cook until the bread is golden brown and crispy, and the cheese is thoroughly melted, about 2-3 minutes per side.
  10. Slice each sandwich in half and serve immediately with your favorite chips or a side salad.

  • Make Ahead: Caramelized onions can be prepared up to 3 days in advance and stored in an airtight container in the refrigerator.
  • Freezing: Assemble the sandwiches without grilling, wrap them tightly in plastic wrap and then foil, and freeze for up to 2 months. Thaw completely in the refrigerator before grilling.
