Just a touch, of course – enough to turn it into an undeniable dessert masterpiece! - 16.5 oz Pillsbury Sugar Cookie Dough (1 roll) – Using pre-made dough makes this dessert incredibly quick and easy, perfect for busy schedules.
- 1 cup peanut butter – Creamy peanut butter works best for a smooth frosting texture.
- 1 cup powdered sugar – For that perfect sweet and airy frosting consistency.
- 1/2 cup butter (softened) – Essential for a rich, creamy frosting base.
- 2-3 tbsp milk – Adjust as needed to achieve your desired frosting thickness.
- 1/4 cup jelly (any kind) – Strawberry or grape are classic, but feel free to experiment with your favorite fruit preserves for a unique twist.
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). This ensures your cookie crust bakes evenly and perfectly.
Sugar Cookie Crust
- On a lightly floured piece of parchment paper, roll out the sugar cookie dough. Sprinkle a little flour on your rolling pin as well to prevent sticking, ensuring a smooth, even crust.
- Carefully transfer the rolled dough on the parchment paper to a 12-inch pizza pan.
- Fold the edges of the parchment paper and cookie dough slightly up and over the edge of the pan, gently pressing down to create a neat, clean border for your pizza.
- Aim for the dough to be roughly 10-11 inches in diameter. This leaves enough room for the cookie to expand slightly during baking without overflowing the pan.
- Bake for 8-12 minutes. Keep a very close eye on it after 8 minutes, as ovens vary. If the dough starts to “poof” up in the center, gently shake the pizza pan or poke a small hole with a fork to release air, then continue baking until the edges are just barely golden.
- Once baked, remove the cookie crust from the oven and allow it to cool completely on the pan before frosting. A cool crust prevents the frosting from melting.
Peanut Butter Frosting
- In a mixing bowl, cream together the softened butter and peanut butter until smooth and well combined. This forms the delicious base of your frosting.
- Gradually add the powdered sugar, about 1/3 cup at a time, alternating with 1 tablespoon of milk. Mix thoroughly after each addition. Continue until your frosting reaches your desired consistency – add more milk for a thinner frosting, or less for a thicker one.
- Once the sugar cookie crust is completely cool, evenly spread the creamy peanut butter frosting over its surface, all the way to the edges.
- For the jelly swirl, heat your chosen jelly in the microwave on medium heat for about 30 seconds, or until it becomes nice and loose, making it easy to spread.
- Carefully transfer the warmed jelly into a squeeze bottle (or a piping bag with a small tip). Drizzle or squeeze jelly circles onto the peanut butter frosting, starting from the center and working your way outwards, or create any pattern you desire.
- Using a butter knife or a skewer, gently run it through the jelly and frosting. Start from the outside of the pizza and drag towards the center, then alternate by dragging from the center outwards, to create a beautiful, decorative swirl pattern.
