Instructions

Make the Cake

  • Preheat the oven to 325°F (160°C). Thoroughly spray a 9-inch bundt pan with nonstick cooking spray or grease and flour it well. (Both silicone and metal pans work, just ensure they are well-prepared). Set aside.
  • In a medium bowl, whisk together the flour, baking soda, apple pie spice (or ground cinnamon and cloves if substituting), and salt. Ensure all dry ingredients are uniformly combined.

  • In a separate, large bowl, use a hand mixer or stand mixer on medium speed to beat together the granulated sugar, brown sugar, vegetable oil, vanilla extract, and room-temperature eggs until the mixture is light, creamy, and well combined.

  • Gradually add the whisked dry ingredients to the wet mixture, blending on low speed or by hand until just combined. Be careful not to overmix; stop as soon as no dry flour streaks remain.
  • In a medium bowl, combine the peeled and diced Granny Smith and Honeycrisp apples. Toss them with the lemon-lime soda or fresh lemon juice, then stir in the additional apple pie spice (or ground cinnamon if using). (Refer to the note below in the ‘Notes’ section for tips on evenly distributing apples).

  • Gently fold the diced apples into the prepared cake batter by hand using a spatula, ensuring they are well distributed without overmixing.
  • Pour the batter evenly into your prepared bundt pan. Place the bundt pan on a large baking sheet (this helps prevent any spills and makes handling easier).
  • Bake for 60 to 75 minutes, or until a wooden skewer or toothpick inserted into the thickest part of the cake comes out with only a few moist crumbs attached.
  • Remove the cake from the oven and let it cool in the bundt pan for 15 to 20 minutes on a wire rack. This allows the cake to firm up. After this time, carefully invert the cake onto the wire rack to finish cooling completely. While it cools, proceed with making the caramel glaze.

Caramel Glaze

  • In a medium saucepan, combine the unsalted butter, heavy cream, light brown sugar, and fine sea salt. Place over medium heat, stirring occasionally, and bring to a gentle simmer. Continue to simmer for about 3-5 minutes, ensuring the sugar dissolves completely and the glaze is smooth.

  • Remove the saucepan from the heat. Carefully stir in the bourbon (if using) and the vanilla extract until well combined. Be mindful, as the mixture might foam slightly.

  • Allow the caramel glaze to sit for 5-10 minutes off the heat to thicken slightly to a pourable consistency.
  • Optionally, you can lightly dust the top of your warm cake with a little powdered sugar for an elegant touch. Then, generously pour the prepared caramel glaze over the warm cake. Serve immediately and enjoy!

Notes

Storage Information

  • Make Ahead: This cake can be made up to a day in advance and stored in the refrigerator, tightly covered, until ready to serve. The caramel glaze can be stored in the refrigerator for up to 5 days. When the glaze cools down completely it may become too thick to pour. If you have leftovers, reheat the caramel glaze in the microwave to make it pourable again.
  • Freezing: You can freeze the cake (without the glaze) for up to 3 months. Simply wrap it tightly in plastic wrap and aluminum foil. Thaw it at room temperature before glazing and serving.
  • Refrigeration: Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.

We prefer this cake with the apples all bunched together at the bottom of the cake – it basically is like apple pie filling baked right in. If you prefer to have your apples evenly dispersed throughout the cake, simply reserve a few tablespoons of the flour mixture and toss the apples in that mixture before mixing into the cake batter.
