Delicious Chocolate Peanut Butter Cup Cookies with Reese's Minis, a must-try dessert

The Ultimate Indulgence: Chocolate Peanut Butter Cup Cookies

There’s a certain magic that happens when chocolate and peanut butter come together. It’s a flavor combination that transcends ordinary treats, creating something truly extraordinary. And when you combine that classic duo into a warm, chewy cookie packed with mini Reese’s Peanut Butter Cups? Pure bliss. These Chocolate Peanut Butter Cup Cookies aren’t just a dessert; they’re an experience, a delightful answer to any sweet craving, and a guaranteed crowd-pleaser.

A Family Favorite Born from Cravings

Lately, the request for homemade cookies has become a nightly chorus in our home, particularly from Chris. The tell-tale sounds of kitchen cupboards opening and closing are inevitably followed by a hopeful:

“Trish, do we have any cookies in the house?”

“Sorry, not tonight!”

This little ritual repeated itself for far too long until I finally caved – and I’m so glad I did. It was time to whip up a batch of something truly special, something that would not only satisfy those persistent cravings but also become an instant family favorite. And what better place to start than with our absolute favorite candy: Reese’s Peanut Butter Cups?

Chocolate Overload Meets Peanut Butter Perfection

I decided to take our love for Reese’s and elevate it, combining it with an intense chocolate cookie base. The result? These incredibly rich and satisfying Chocolate Peanut Butter Cup Cookies. Don’t let their decadent appearance fool you; these cookies are surprisingly quick to make. While they’re not technically “no-bake,” they require only about seven minutes in the oven. That’s so fast, it almost feels like cheating!

Baking is often a cherished family activity, and this time, my son Bryce was my enthusiastic assistant. Together, we mixed, scooped, and transformed simple ingredients into these golden-brown masterpieces. I’m almost embarrassed to admit just how quickly they vanished. Reece, my other son, walked through the door after school and, before I could even register what was happening, had devoured three cookies! He then employed a rather charming, albeit transparent, tactic:

“Here! I got you a cookie. What? Oh, you don’t want it right now? Okay. I guess I’ll have to eat it then since I already picked it up…”

A Cookie So Good, It’s Hard to Share

That little trick worked a couple of times before I realized I was being expertly manipulated! But honestly, how could I blame him? These cookies are truly exceptional. They boast a perfectly soft and wonderfully chewy interior, complemented by a delicate, almost imperceptible crunch on the exterior. It’s a texture symphony that makes each bite pure joy.

I have just one essential recommendation to enhance this already perfect treat: have some milk nearby. While these Chocolate Peanut Butter Cup Cookies are absolutely fabulous on their own, pairing them with a cold glass of milk elevates the experience to another level. It’s a combination so divine, you’ll feel like you’ve reached chocolate and peanut butter heaven!

Author: Trish – Mom On Timeout

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsweetened baking cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup smooth peanut butter (I used Skippy Natural)
  • 1 tsp vanilla extract
  • 1 egg, room temperature
  • 2 tbsp water
  • 1 1/2 cups Reese’s minis peanut butter cups, divided

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line a cookie sheet with parchment paper or lightly grease it.
  3. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt. Set aside.
  4. In a large bowl, cream together the light brown sugar, granulated sugar, melted butter, and smooth peanut butter until the mixture is light and fluffy.
  5. Add the room temperature egg, vanilla extract, and water to the wet ingredients. Beat until all ingredients are well blended and smooth.
  6. Gradually add the dry ingredients mixture to the wet ingredients, stirring until just combined. Be careful not to overmix the dough.
  7. Gently fold in one cup of the Reese’s minis peanut butter cups into the cookie dough.
  8. Scoop out rounded tablespoons of the thick cookie dough onto your prepared cookie sheet.
  9. Slightly flatten each cookie dough ball and place 1-2 additional Reese’s minis on top of each cookie for a beautiful finish.
  10. Bake for 7-8 minutes, or until the edges are set and the centers are still slightly soft. Do not overbake to ensure soft, chewy cookies.
  11. Remove the cookies from the oven and let them cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips for Perfect Chocolate Peanut Butter Cup Cookies

  • Don’t Overmix: Overmixing the dough can lead to tough cookies. Mix until just combined.
  • Room Temperature Egg: A room temperature egg emulsifies better with the other ingredients, leading to a smoother, more uniform dough.
  • Quality Ingredients: Using good quality cocoa powder and peanut butter makes a noticeable difference in flavor.
  • Chill the Dough (Optional): If your dough is too soft to handle, chilling it for 15-30 minutes can make it easier to scoop and shape.
  • Parchment Paper is Key: It prevents sticking and makes cleanup a breeze.
  • Store Properly: Keep leftover cookies in an airtight container at room temperature for up to 3-4 days to maintain freshness.
