  • 1/4 cup Challenge Unsalted Butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 3/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 cups milk
  • 2 eggs (lightly beaten)
  • 1/2 cup shredded sharp cheddar cheese
  • 5 strips bacon (cooked until crispy and crumbled)
  • 2 tbsp chopped chives

Instructions

  1. Melt the Challenge Butter in a medium skillet over medium heat. Add the hash browns and cook for 3-5 minutes, stirring occasionally, until slightly softened. Season with salt and pepper to taste. Remove from heat and allow the potatoes to cool slightly.
