Essential Ingredients for Your Cheesy Broccoli Rice Casserole
You’re going to adore how incredibly simple and satisfying this broccoli rice cheese casserole recipe is! Each ingredient plays a vital role in creating its renowned comforting flavor and perfect texture. Gathering these items is the first step to a truly delicious meal. As always, you can find a comprehensive printable recipe card at the conclusion of this post for your convenience. Now, let’s explore what you’ll need to have on hand:
- Broccoli: You’ll need approximately two medium heads of broccoli, yielding about 8 cups or 20 ounces of fresh broccoli florets. It’s crucial to cut the florets into bite-sized pieces, ideally no larger than one inch, to ensure even cooking and easy eating. Fresh broccoli is preferred for its vibrant color and crisp-tender texture once cooked.
- Unsalted Butter: This is a foundational ingredient, used for sautéing the onions and enriching the overall flavor profile of this broccoli and rice casserole. Unsalted butter allows you to control the total sodium content of the dish.
- Extra Virgin Olive Oil: The combination of butter and olive oil provides a perfect fat base, adding a nuanced flavor and assisting in achieving that golden translucency for the onions.
- Onion: One medium yellow onion, finely diced, is essential for adding a sweet, aromatic depth to the casserole base. White onion can also be substituted if preferred. Ensure it’s finely diced to melt into the sauce rather than stand out.
- Long Grain White Rice: Crucially, the rice does not need to be pre-cooked. It absorbs all the delicious flavors as it cooks directly in the pot, becoming wonderfully tender and creamy. Basmati or Jasmine rice are excellent choices for their texture and aroma.
- Garlic: Three cloves of minced garlic provide a robust and savory punch. If you’re not a huge garlic fan, you can reduce this slightly, but it contributes significantly to the casserole’s irresistible aroma and taste without creating overpowering chunks.
- Chicken Stock or Broth: Opt for a low-sodium version to better control the seasoning. Using chicken stock instead of water is key, as it infuses the rice with a profound depth of savory flavor as it cooks.
- Half and Half: This ingredient is responsible for much of the casserole’s luxurious richness and creamy consistency. Whole milk can be used as a substitute if half and half is unavailable, though the final dish might be slightly less decadent.
- Salt: A crucial seasoning that brings balance and enhances all the other flavors in the recipe, ensuring the casserole is perfectly seasoned.
- Sharp Cheddar Cheese: We highly recommend purchasing a block of sharp cheddar and grating it yourself. Pre-shredded cheeses often contain anti-caking agents that prevent optimal melting, whereas freshly grated cheese melts beautifully, creating a smoother, creamier sauce. If sharp cheddar isn’t your preference, explore other delightful options in our “Tips and Tricks” section below.
- Parmesan Cheese: The addition of Parmesan cheese, with its salty, umami-rich profile, adds a wonderful layer of sharp flavor and complexity, elevating the classic comfort of this dish.
Irresistible Broccoli and Rice Casserole Topping
No casserole is complete without a glorious topping that adds texture and a final burst of flavor. This simple yet effective topping creates a crunchy, golden crust that perfectly contrasts the creamy interior.
- Unsalted Butter: Melted butter binds the topping ingredients together, allowing them to crisp up beautifully and imparting a rich, buttery flavor to every bite.
- Panko Breadcrumbs: These Japanese-style breadcrumbs are celebrated for their exceptionally light and airy texture, which results in a wonderfully crispy, golden-brown topping. If you’re looking for alternatives, our “Tips and Tricks” section offers other delicious suggestions.
- Smoked Paprika: A touch of smoked paprika adds a subtle smokiness and a beautiful reddish hue to the topping, enhancing the overall flavor profile without being overpowering.
- Parmesan Cheese: Not only does Parmesan help the topping achieve a fantastic golden color, but its robust, salty flavor also adds depth and a savory finish to the crunchy crust.
Simple Steps: How to Make Broccoli Rice Casserole
Crafting this delicious and comforting broccoli rice casserole is a straightforward process. Follow these easy steps to bring this creamy, cheesy dish to your dinner table:
- Prepare Your Baking Dish: Begin by preheating your oven to 400°F (200°C). Lightly grease a standard 9×13 inch baking dish and set it aside. This ensures a smooth transfer and prevents sticking.
- Cook the Broccoli: Place your bite-sized broccoli florets into a microwave-safe bowl and cover it. Microwave for approximately 3½ to 4 minutes, or until the broccoli is tender-crisp and exhibits a vibrant green color. Be careful not to overcook, as it will bake further in the oven. Alternatively, if you prefer the stovetop method: Bring a large pot of water to a rolling boil. Add the broccoli florets and cook for about 4 minutes until they are bright green and tender. Remove them promptly with a slotted spoon and allow them to drain thoroughly before proceeding with the recipe. Proper draining prevents excess moisture in the casserole.
- Sauté Aromatics: In a large, deep skillet or a Dutch oven, melt the unsalted butter and olive oil together over medium heat. Add the finely diced onions to the pan and cook, stirring frequently, for about 6 to 8 minutes until they become wonderfully translucent and softened. This step is crucial for building the foundational flavor of your casserole.
- Toast Rice and Garlic: Stir in the uncooked long-grain white rice and minced garlic. Continue cooking for approximately 1 minute, stirring continuously. This brief toasting helps to develop a deeper, nuttier flavor in the rice and ensures the garlic becomes fragrant.
- Simmer the Rice: Pour in the chicken stock, half and half, and add the salt. Stir all ingredients together to combine them well. Bring this mixture to a gentle boil, then immediately reduce the heat to medium-low. Allow the rice to simmer, stirring frequently to prevent sticking, for about 22 to 25 minutes, or until the rice is perfectly tender and most of the liquid has been absorbed, creating a creamy consistency. Once cooked, remove the skillet from the heat.
- Incorporate Cheeses and Broccoli: Gently stir in the pre-cooked broccoli florets, the freshly grated sharp cheddar cheese, and the grated Parmesan cheese. Ensure all ingredients are evenly distributed throughout the creamy rice mixture.
- Transfer to Baking Dish: Carefully transfer the entire broccoli cheese rice mixture into your prepared baking dish. (If you’re using an oven-safe skillet or Dutch oven, you might opt to bake it directly in the same vessel for even less cleanup!)
- Prepare the Topping: In a small separate bowl, combine the melted unsalted butter, Panko breadcrumbs, smoked paprika, and the remaining grated Parmesan cheese. Stir these ingredients until they are thoroughly mixed.
- Add the Topping and Bake: Evenly sprinkle this crunchy topping mixture over the surface of the casserole. Bake the broccoli cheese rice casserole in the preheated oven for 15 to 20 minutes, or until the topping is beautifully golden brown and the casserole is bubbling invitingly around the edges.
- Rest and Serve: Once baked, remove the casserole from the oven and allow it to rest for a minimum of 5 minutes before serving. This resting period allows the flavors to meld and the casserole to set slightly, making it easier to serve.

Storage and Freezing Information for Your Casserole
Planning ahead or dealing with delicious leftovers? This broccoli cheese rice casserole stores beautifully, allowing you to enjoy its comforting flavors days after preparation or save it for a future meal. Proper storage ensures maximum freshness and taste.
Refrigerator Storage:
To store your casserole in the refrigerator, allow it to cool completely after baking. Once cool, cover the baking dish tightly with aluminum foil or transfer any remaining casserole to an airtight food storage container. It will remain fresh and delicious in the fridge for up to 4 days. When reheating, cover it loosely and microwave until heated through, or warm it in the oven at 350°F (175°C) until bubbly.
Freezer Storage:
This casserole also freezes exceptionally well, making it an excellent option for meal prep or emergency dinners. To freeze, ensure the casserole has cooled down entirely to room temperature. Transfer it into a freezer-safe, airtight container or a heavy-duty freezer bag, ensuring as much air as possible is removed to prevent freezer burn. It can be stored in the freezer for up to 3 months. For best results, thaw the frozen casserole overnight in the refrigerator before reheating. You can then reheat it gently in the microwave or, for a crispier top, in the oven until warmed through and bubbling.
Trish’s Expert Tips and Creative Tricks
Elevate your Broccoli Rice Casserole with these simple yet impactful tips and tricks, designed to customize the dish to your taste and make it even more versatile:
- Transform into a Complete Meal: Easily turn this side dish into a hearty main course by adding cooked protein. Diced ham, especially leftover holiday ham, or shredded rotisserie chicken are fantastic additions. Simply stir them into the rice and broccoli mixture along with the cheese before transferring to the baking dish. This makes for a superb way to utilize leftovers and create a quick, satisfying dinner.
- Introduce a Vegetable Twist: For a slightly different flavor profile and added visual appeal, consider swapping in half cauliflower for the broccoli. The milder taste of cauliflower blends seamlessly with the cheese and rice, offering a unique yet equally delicious twist. You could even use a mix of both for a “Broccoli Cauliflower Rice Casserole.”
- Explore Different Cheeses: While sharp cheddar is a classic choice, don’t hesitate to experiment with other cheeses. Swiss cheese offers a nutty, slightly sweet note that pairs wonderfully, while pepper jack cheese introduces a pleasant mild heat for those who enjoy a little kick. You can either go half and half with cheddar or commit entirely to a new cheese for a delightful change. Monterey Jack or even a creamy Havarti could also work beautifully.
- Customize the Crunchy Topping: The Panko breadcrumb topping is fantastic, but there are many ways to customize it! For a classic Southern touch, crushed Ritz crackers provide a buttery, flaky crust. Crushed cornflakes offer a different kind of crispiness and a subtly sweet flavor. If you prefer a richer, herb-infused topping, seasoned breadcrumbs (Italian-style) can add another layer of savory goodness. Feel free to mix and match or add your favorite herbs like dried parsley or chives to the topping mixture.
- Spice it Up: A dash of your favorite hot sauce or a pinch of red pepper flakes stirred into the rice mixture can add a subtle warmth and depth, especially if you enjoy a little heat.
- Utilize Frozen Broccoli: If fresh broccoli isn’t available, frozen broccoli florets can be used. Just ensure they are thawed and thoroughly drained (blotting with paper towels helps) to prevent excess water from making the casserole watery. Cook them briefly as instructed to reach a tender-crisp stage before adding to the rice.
