Pastel Mint Patties

Ingredients

  • 1/4 cup butter, softened
  • 1/3 cup light corn syrup
  • 4 cups powdered sugar, divided
  • 1 to 2 tsp your choice of extract or candy flavoring (I used mint)
  • Food coloring (preferably gel or paste, I used these food colors)
  • 1/2 cup granulated sugar, for rolling balls

Instructions

  1. In a small bowl, combine the softened butter and light corn syrup until well mixed.
  2. Gradually add 2 cups of the powdered sugar along with your chosen extract or candy flavoring. Beat until the mixture is smooth and well combined. Adjust the flavoring 1/2 teaspoon at a time until it reaches your desired intensity.
  3. Stir in an additional cup of powdered sugar to further thicken the dough.
  4. Lightly sprinkle your cutting board with the remaining cup of powdered sugar. Turn the mint mixture onto the sugared surface.
  5. Knead the mixture thoroughly until all the powdered sugar is absorbed and the dough becomes completely smooth and pliable.
  6. Divide the prepared dough into four equal portions.
  7. Using gel food coloring, tint one portion pink, one green, one blue, and one yellow. Knead each portion separately until the color is evenly distributed and vibrant.
  8. Roll small pieces of the colored dough into 3/4-inch balls. Then, roll each ball in granulated sugar to coat evenly.
  9. Gently flatten each sugar-coated ball with the tines of a fork to create the classic patty shape.
  10. Place the candies, uncovered, on a baking sheet or wire rack and let them stand at room temperature for 1 full day. This allows them to set and firm up.
  11. Once set, store your beautiful Pastel Mint Patties in an airtight container at room temperature for optimal freshness.
