While some might call it a mere accident of the calendar, I prefer to see it as a serendipitous alignment of sweet destiny. My Dad, bless his heart, possesses an unshakeable sweet tooth. It’s a trait I wholeheartedly inherited, and one for which I am eternally grateful. The other day, while discussing Father’s Day menu plans with my older sister, Melissa, I mentioned bringing a particularly sweet treat. Her immediate response was, “Have you EVER heard Dad complain about something being too sweet?” The answer, of course, is a resounding nope. A true testament to his love for all things sugary, and a green light for me to unleash my most decadent creations!

The Inspiration Behind the Tropical Treat: A Dad’s Love for Coconut

Knowing my Dad’s absolute adoration for all things coconut, it was a no-brainer to incorporate this tropical flavor into his Father’s Day goodies. His favorite candies invariably feature coconut, so I set out to craft several coconut-infused confections. Among them, this stunning Pina Colada Fudge emerged as a standout. This was my inaugural attempt at creating a Pina Colada flavored fudge, and initially, I envisioned using a trio of extracts – coconut, rum, and pineapple – to capture that authentic cocktail essence.

However, my quest for pineapple extract proved to be more challenging than anticipated. While I did manage to track some down online, it wouldn’t arrive in time for the big day. Necessity, as they say, is the mother of invention! Instead of delaying, I pivoted and decided to incorporate finely chopped dried pineapple directly into the fudge. And what a brilliant decision that turned out to be! The dried pineapple not only delivered a concentrated burst of tangy pineapple flavor but also added a delightful chewiness and texture that elevated the fudge from great to absolutely extraordinary. This unexpected twist truly made the fudge sing with tropical vibrancy, proving that sometimes, the best innovations come from improvisation.

Ingredients

  • 2 cups white chocolate chips
  • 1 cup shredded coconut, sweetened or unsweetened
  • 4 tbsp butter, softened to room temperature
  • ¾ cup sweetened condensed milk (approximately half of a 14 oz can)
  • ¾ cup marshmallow fluff (or marshmallow creme)
  • ½ tsp salt
  • ¾ tsp coconut extract
  • ¾ tsp rum extract
  • ¾ tsp pineapple extract OR ½ cup dried pineapple, finely chopped

Instructions

  1. Prepare an 8×8 inch baking pan by lining it with aluminum foil. Ensure the foil extends over the edges to create “handles” for easy removal of the set fudge. Lightly spray the foil with nonstick cooking spray to prevent sticking.
  2. In a microwave-safe bowl, melt the white chocolate chips. Heat on medium power, stirring thoroughly every 30 seconds, until the chocolate is completely melted and smooth. Be careful not to overheat.
  3. Into the melted white chocolate, stir in the shredded coconut, softened butter, sweetened condensed milk, marshmallow fluff, and salt. Mix until all ingredients are well combined and the mixture is smooth and glossy.
  4. Add the coconut extract and rum extract to the fudge mixture. If you are using pineapple extract, stir it in now. If opting for dried pineapple, fold it into the mixture until it’s evenly distributed throughout the fudge.
  5. Pour the prepared fudge mixture into the lined 8×8 inch pan. Use a spatula to spread it evenly and smooth out the top surface.
  6. Place the pan in the refrigerator and allow the fudge to cool and set completely for at least 3 hours, or until firm to the touch.
  7. Once set, use the foil “handles” to lift the entire block of fudge out of the pan. Gently peel away the aluminum foil.
  8. Place the fudge on a cutting board and cut it into small, uniform squares (typically 36 pieces from an 8×8 inch pan).
  9. Serve immediately or store the fudge in an airtight container at room temperature for up to one week, or in the refrigerator for extended freshness.
