Ingredients
Salad
- 16 oz short pasta (penne, rotini, fusilli, etc.)
- 12 oz zucchini spirals (like Green Giant Veggie Spirals™)
- 8 oz jar sun-dried tomatoes, drained
- 15 oz jar marinated artichokes, drained
- 8 oz fresh mozzarella, drained, quartered or halved
- 1/2 red onion, thinly sliced
- 1 pint cherry or grape tomatoes, halved
Dressing
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp fresh squeezed lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp parsley flakes
- 1 tsp dried oregano
- 1 tsp Dijon mustard
Instructions
- Cook pasta to al dente according to package directions. Immediately remove pasta with a slotted spoon and place in an ice bath to cool completely.
- Add zucchini spirals to the same boiling pasta water and cook for just 1 minute. Remove with a slotted spoon and place in a separate ice bath to cool.
- While pasta and zucchini cool, combine all of the dressing ingredients in a small bowl and whisk until well combined and emulsified. Set aside.
- Once cooled and drained, place pasta and zucchini in a large mixing bowl. Add the remaining salad ingredients: sun-dried tomatoes, artichokes, fresh mozzarella, red onion, and cherry/grape tomatoes.
- Pour about half of the prepared dressing over the salad ingredients and toss gently to coat everything evenly.
- Refrigerate the pasta salad for at least 2 hours to allow the flavors to meld.
- Just before serving, toss the salad with the remaining dressing for a fresh finish. Serve chilled.
