I’ve even planted an artichoke plant before and successfully harvested several beautiful artichokes from it—that is, until it was tragically mistaken for a weed by a neighbor’s gardener and brutally slaughtered. <
So, walking through that sprawling artichoke farm, observing countless plants laden with their magnificent, edible thistles, was truly exhilarating. I learned an incredible amount about their cultivation, harvesting, and the dedication involved in bringing them to our tables.

Ingredients
Salad
- 12 oz dry pasta, cooked (bow tie, penne, rigatoni, or any preferred shape)
- 8 oz baby spinach
- 5 mandarins, peeled and segmented (such as Cuties)
- 1 cup artichoke hearts, chopped
- 1/2 red onion, thinly sliced
- 1/2 small English cucumber, diced
- 1 red bell pepper, chopped
- 1/2 pint cherry or grape tomatoes, halved
- 1 cup walnut halves or pieces
- 3 oz feta cheese crumbles
Salad Dressing
- 1/3 cup extra virgin olive oil
- 3 tbsp mandarin juice (from the Cuties)
- 3 tbsp white wine (or Chandon sparkling wine for an extra touch)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp dijon mustard
Instructions
- Cook pasta according to package directions. Drain, rinse with cold water, and set aside to cool completely.
- In a large mixing bowl, combine the cooled pasta, baby spinach, segmented mandarins, chopped artichoke hearts, thinly sliced red onion, diced English cucumber, chopped red bell pepper, halved cherry or grape tomatoes, walnuts, and feta cheese crumbles.
- In a separate small bowl, whisk together all the salad dressing ingredients: extra virgin olive oil, mandarin juice, white wine, salt, pepper, and dijon mustard until well combined.
- Pour the dressing over the salad ingredients. Toss gently to ensure all components are evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This salad tastes even better after an hour or two in the fridge.

How To Cook Artichokes in an Instant Pot:
1. Add 1 cup of water, 2 to 3 smashed garlic cloves, 1 or 2 lemon slices, and 1 bay leaf to your Instant Pot.
2. Place the steamer basket inside the Instant Pot.
3. Trim the artichokes (snip off the thorny tips of the leaves and cut about an inch off the stem) and rub them with a lemon wedge to prevent browning.
4. Place the trimmed artichokes in the steamer basket, stem side up.
5. Close the lid and set the vent to “sealing.” Select the “manual” or “pressure cook” setting, ensure it’s set to high pressure (which is usually the default), and set the timer for 10 minutes for medium-sized artichokes (adjust slightly for larger or smaller ones).
6. Once the cooking cycle is complete, carefully turn the vent to “venting” for a quick pressure release (QR). Be cautious of the steam.
7. Once the pressure is fully released, remove the lid and carefully take out the artichokes using tongs.
8. Allow them to cool slightly. Peel off the outer petals until you reach the more tender, pale leaves. Remove the fuzzy choke from the center of the heart and chop the tender heart into bite-sized pieces for your salad.
9. Don’t throw away the outer petals! They are still delicious and can be enjoyed by scraping off the edible fleshy part at the base of each petal with your teeth, dipped in your favorite sauce!
