Are you in the mood for an unparalleled chocolate experience today? For many of us, the answer is always a resounding yes, especially when it comes to brownies. And not just any brownies, but specifically, these divine mocha truffle brownies, generously slathered with a luxurious chocolate ganache frosting. These aren’t just baked goods; they are a celebration of flavor, texture, and pure chocolate bliss.

It had been some time since I embarked on the delightful journey of baking brownies entirely from scratch. While I must admit that some box mixes have certainly stepped up their game and deliver a commendable dessert, there’s an undeniable magic and profound satisfaction in creating something truly exceptional with your own hands. The beauty of this particular recipe lies in its surprising simplicity. Despite the sophisticated flavor profile and the impressively decadent results, the steps are straightforward and accessible, leaving little room for excuses not to whip up a batch.

My profound partiality to mocha-flavored recipes is no secret. This affection likely stems from two key factors: firstly, mochas stand as my absolute favorite hot beverage, a perfect blend of robust coffee and comforting chocolate. Secondly, and perhaps more crucially for baking, the subtle bitterness and rich aroma of coffee work wonders in intensifying the chocolate flavor, elevating it from merely good to truly rich, complex, and utterly fabulous. The coffee doesn’t just add a distinct note; it deepens the entire chocolate experience, making these brownies profoundly more satisfying.

The sheer volume ensures there’s enough to share, and perhaps, a few extra to stash away for your personal enjoyment.

The brownies themselves are a testament to intense chocolate flavor, woven through with that captivating mocha essence that elicits an involuntary “mmmmm!” with every bite. The texture is precisely what you desire in a perfect brownie: dense and chewy with just the right amount of fudginess, a truly satisfying foundation for the exquisite topping.

And what a topping it is! Crowned with arguably the most decadent of all chocolate delights – a silky, glossy ganache – these brownies practically call out to you, begging for that first bite. The ganache adds an extra layer of luxurious smoothness and an even deeper chocolate profile, creating a multi-faceted dessert that is both insanely delicious and utterly perfect for all of us devoted chocolate lovers. They embody indulgence without being overly complicated, striking that perfect balance between homemade comfort and gourmet sophistication.

Baking Tips for Perfect Mocha Truffle Brownies

Achieving brownie perfection is easier than you might think, especially with a few key tips. First, ensure your ingredients are at room temperature, particularly the eggs and butter. This helps them combine more smoothly, creating a more uniform and tender crumb. When melting the chocolate and butter, use a gentle heat or short bursts in the microwave, stirring frequently, to prevent scorching the chocolate. Overheated chocolate can become grainy or seize, which would compromise the texture of your brownies.

The coffee component is crucial for that signature mocha flavor. Using instant coffee dissolved in boiling water ensures the coffee granules are fully incorporated, providing a smooth, integrated taste without any grittiness. Allow the chocolate-coffee mixture to cool completely before adding it to your egg and sugar mixture. This prevents the eggs from cooking prematurely and ensures a perfectly fudgy result.

When it comes to mixing, less is often more. Once you add the flour, stir it in just until it’s combined. Overmixing develops the gluten in the flour, which can lead to tough, cake-like brownies instead of the desired fudgy texture. For the ganache, similarly, gentle heat and constant stirring are key to a smooth, glossy finish. Let the brownies cool completely before frosting to avoid a melted mess, and then refrigerate them to allow the ganache to set properly for clean, beautiful slices.

Ingredients

  • 6 ounces dark chocolate chips
  • 3 ounces semi-sweet chocolate chips
  • 11 tablespoons butter about 2/3 cup
  • 1 teaspoon instant coffee
  • cup boiling water
  • 3 eggs room temperature
  • 1 ¾ cup granulated sugar
  • 1 cup all purpose flour
  • 1 tablespoon cocoa powder to “flour” baking pan 1 to 2 tbsp

Ganache Frosting

  • 2 cups semi-sweet chocolate chips
  • cup heavy whipping cream

Instructions

  • Melt dark and semi-sweet chocolate chips and butter together in a microwave-safe bowl. Heat on medium in 30-second intervals, stirring thoroughly after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat.
  • In a separate small bowl, combine the boiling water and instant coffee, stirring until the coffee granules are fully dissolved. This creates a strong coffee concentrate to enhance the chocolate flavor. Pour the entire 1/3 cup of coffee into the melted chocolate mixture and stir until fully combined and homogenous.
  • Allow the chocolate-coffee mixture to cool down completely to room temperature. This step is crucial to prevent the eggs from scrambling when added later.
  • Preheat your oven to 325°F (160°C). This lower temperature helps ensure the brownies cook evenly and stay fudgy.
  • Generously grease a 9×13 inch baking pan. Instead of traditional flour, “flour” the pan with cocoa powder, making sure to tap out all excess powder. This technique prevents white streaks on your dark brownies and adds another layer of chocolatey flavor.
  • In a large mixing bowl, beat the 3 room temperature eggs until they are light, frothy, and slightly pale. This incorporates air, which contributes to the brownie’s texture.
  • Gradually beat in the granulated sugar into the eggs for at least two minutes on medium speed. The mixture should become even lighter in color and thick.
  • Reduce the mixer speed to low, then slowly pour in the cooled chocolate-coffee mixture. Beat just until it’s fully incorporated into the egg and sugar mixture.
  • Finally, gently stir in the all-purpose flour. Mix only until no dry streaks of flour remain. Be careful not to overmix, as this can make your brownies tough.
  • Pour the brownie batter evenly into your prepared 9×13 inch pan. Bake for 40 minutes, or until the brownies are set and a toothpick inserted near the center comes out with moist crumbs, not wet batter. Don’t worry if the top develops some cracks; these will be beautifully covered by the ganache. Allow the brownies to cool completely on a wire rack before proceeding to the next step. Cooling completely ensures the ganache sets perfectly.

Ganache Frosting

  • In a small saucepan, combine the semi-sweet chocolate chips and heavy whipping cream. Stir continuously over very low heat until the chocolate has fully melted and the cream is completely combined with the chocolate, forming a smooth, glossy ganache. Alternatively, you can heat the cream gently until simmering, then pour it over the chocolate chips in a heatproof bowl, let it sit for 5 minutes, and then stir until smooth.
  • Once the brownies are completely cooled, pour the warm ganache evenly over them, spreading it gently to the edges. Refrigerate the pan until the ganache frosting has completely set and firmed up, which usually takes a couple of hours. Once set, cut the brownies into desired bar sizes and store them in an airtight container to maintain their freshness and fudgy texture.

Notes for Storage & Serving

Storage Information

Room temperature: These delicious brownies can be kept fresh in an airtight container for up to 3 days. Ensure they are stored in a cool, dry place away from direct sunlight.

Refrigerator: To extend their shelf life, transfer the brownies to an airtight container and store them in the refrigerator for up to one week. The ganache will firm up significantly when chilled, providing a different, delightful texture.

Freezing: While freezing is possible, the texture of the ganache frosting might be slightly affected upon thawing, potentially becoming softer or separating. For best results, we generally recommend freezing the baked brownies without the ganache. Wrap the cooled brownie slab tightly in a layer of plastic wrap, followed by a layer of aluminum foil. They can be frozen for up to 3 months. Once thawed at room temperature, you can then prepare and add the fresh ganache.

Serving Suggestions: These Mocha Truffle Brownies are fantastic on their own, but can be elevated with a dollop of whipped cream, a scoop of coffee or vanilla ice cream, or a dusting of cocoa powder. For an extra touch of elegance, sprinkle with some chocolate shavings or a few whole coffee beans.
