A Glimpse into Our Family Life: Soccer, Spelling, and Supper

Life in our household is often a whirlwind of activity, and last weekend was no exception. Both boys had soccer games, bringing together quite the cheering squad. My husband Chris’s parents were there, along with my dad, and both Chris’s brother and mine. It’s always a wonderful, chaotic affair when the whole family gathers to support the kids.

After the games, we all headed to our favorite local Chinese restaurant for a celebratory late lunch. Amidst the clatter of chopsticks and lively chatter, our youngest, Bryce, who has recently developed a charming obsession with spelling everything he sees or hears, piped up. He proudly started telling me how to spell “sove.” “S-O-V-E,” he insisted. While I was incredibly impressed by his dedication, I had a slight dilemma – that particular word, as far as I knew, didn’t exist.

My go-to method for deciphering his unique vocabulary is to ask him to use the word in a sentence. So I did. He thought for a moment, then declared, “You know, like she is going to sove us our food. Sove.” And just like that, the mystery was solved. Bryce pronounces “serve” as “sove,” a charming quirk that has been part of his speech journey since he started therapy at three. It’s truly adorable, and I often find it incredibly hard to correct him. But when situations like this arise, I feel it’s important to gently guide him.

I explained that the word is actually pronounced “serve” and spelled “s-e-r-v-e.” He, in classic toddler fashion, respectfully disagreed. You win some, you lose some, right? From that day forward, I’ve made it a point to pronounce “serve” with exaggerated clarity, hoping it sticks. It’s these small, everyday moments that make parenting so uniquely challenging and utterly rewarding.

The Unveiling of a Winner: Our Creamy Slow Cooker Beef Stroganoff

Speaking of “serving,” just last week, I “soved” up this incredible slow cooker beef stroganoff to my ever-hungry, always-appreciative family. And let me tell you, it was a total winner. While it might not be the most aesthetically pleasing dish in the culinary world – comfort food often prioritizes taste over haute cuisine visuals – the flavors, oh, the flavors are absolutely phenomenal. It’s the kind of meal that disappears quickly, leaving behind contented smiles and requests for leftovers.

Crafting Deep Flavor: The Secret is in the Searing and Sautéing

What makes this slow cooker beef stroganoff stand out? It’s all about building layers of flavor right from the start. Unlike some slow cooker recipes that simply dump ingredients in, I firmly believe in taking a few extra steps that make all the difference. Searing the beef and sautéing the onions and mushrooms beforehand might add a few minutes to your prep time, but these steps are incredibly worthwhile. Searing the sirloin creates a rich, caramelized crust that locks in juices and adds depth of flavor. Meanwhile, sautéing the onions until translucent and the mushrooms until golden brown develops their natural sweetness and savory notes. These foundational flavors then slowly meld and intensify in your slow cooker, resulting in a complex and incredibly satisfying sauce.

My family’s enthusiastic response to this dish is a clear indication that these initial steps are well worth the effort. The depth of flavor achieved through searing and sautéing elevates this simple slow cooker meal to something truly special, making it taste like you spent hours in the kitchen, even though your slow cooker did most of the work.

The Unexpected Ingredient: Cream Cheese for Unmatched Creaminess

When I was first developing this recipe, I found myself improvising a bit. After whisking in the sour cream at the very end, I noticed the sauce wasn’t quite as thick or as luxuriously creamy as I prefer my stroganoff to be. A quick glance into the fridge for inspiration led me to a block of cream cheese. And oh, what a revelation that was! The addition of cream cheese transformed the sauce, making it unbelievably smooth, velvety, and rich. It added an extra dimension of creamy decadence that I hadn’t anticipated, and now, I can’t imagine making stroganoff without it.

If you’re initially hesitant about adding cream cheese to your stroganoff, thinking, “Uh-uh, I don’t want cream cheese in my stroganoff,” I understand. You could certainly opt for a traditional cornstarch and water slurry to thicken the sauce. However, I wholeheartedly encourage you to try the cream cheese. Seriously, it takes the creamy texture and rich flavor to a whole new level. It melts seamlessly into the sauce, creating an irresistible consistency that coats the tender beef and noodles beautifully. It’s a game-changer, and I’ll be incorporating it into all my skillet stroganoff recipes from now on too.

Ingredients

  • 1 1/2 lbs top sirloin, thinly sliced
  • 1 tsp pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz baby bella mushrooms, sliced
  • 1 small onion, sliced
  • 10.5 oz beef consommé (1 can)
  • 1 cup beef broth (low sodium)
  • 1 tbsp worcestershire sauce
  • 1 cup sour cream
  • 4 oz cream cheese
  • 16 oz wide egg noodles
  • 1 tbsp butter (for noodles)
  • parsley, chopped (optional)

Instructions

  1. Lightly spray a 3-4 quart slow cooker with cooking spray.
  2. Lay out strips of sirloin and season generously with pepper.
  3. In a large skillet, brown the sirloin in olive oil over medium-high heat. Do this in 2-3 batches to ensure the meat sears nicely and develops a rich crust. Avoid overcrowding the pan.
  4. Remove the seared beef from the skillet and transfer it to the prepared slow cooker.
  5. Add 2 tablespoons of butter to the same skillet and sauté the sliced onion and mushrooms for several minutes until softened and lightly browned, scraping up any browned bits from the bottom of the pan. This adds immense flavor.
  6. Pour in the can of beef consommé and stir, making sure to scrape up any flavorful browned bits stuck to the pan. This deglazing step incorporates all those delicious fond into your sauce.
  7. Transfer the entire contents of the skillet (onions, mushrooms, and liquid) to the slow cooker with the beef.
  8. Stir in one cup of low sodium beef broth and the Worcestershire sauce.
  9. Cover the slow cooker and cook on low for 6-8 hours, or until the beef is incredibly tender and easily pulls apart.
  10. Once the beef is cooked, carefully remove one cup of the liquid from the slow cooker.
  11. Using a slotted spoon, transfer the mushrooms, onions, and meat into a separate bowl.
  12. In a separate bowl, whisk together the sour cream and softened cream cheese until the mixture is completely smooth and lump-free.
  13. Gradually add the reserved liquid back into the sour cream and cream cheese mixture, whisking constantly, until your desired sauce consistency is achieved. This helps prevent the sour cream from curdling in the hot slow cooker.
  14. Return the mushrooms, onions, and meat to the slow cooker, gently stirring to distribute them evenly with the creamy sauce.
  15. Meanwhile, prepare wide egg noodles according to package directions until al dente. Drain and stir in the additional tablespoon of butter.
  16. Serve the rich and creamy beef stroganoff generously over the buttered egg noodles. Garnish with fresh chopped parsley if desired for a touch of color and freshness.
